The Graham Hotel just finished a renovation because they call me and reschedule my appointment due to it. I was happy to reschedule since I'm free the next week after. Built in 1870, The Graham is a restaurant, bar and functions, well known for being the Melbourne Gastro Pub. They just celebrate their 15th year and continue to strive and serve modern Australian cuisine.

I wanted to treat my mom to say thank you for helping me the past 6 months ever since I'm about to give birth till now cause she is going back to Indonesia soon. Trying to find the right venue, I came across The Graham with it's ever changing flavour souffle. My mom loves souffle, it's probably her favourite dessert. So I make a reservation since they said it's necessary. 

We ordered two entree two share; Smoke Quail - almond, parsley salad, pumpkin seeds, orange vinaigrette ($19) and Pan fried Scallops - chorizo veloute, pureed apple ($24). Both were simply delicious, my mom normally does not like scallops but she finished the whole dish. Perfectly cooked scallops with creamy aromatic apple and chorizo. On the other side the quail was tender and my mom does not eat raw or rare but once again she finished her portion of quail and the salad was fresh, we love it.

My mom still obsessed with barramundi obviously jump the gun when she heard the Fish of The day; Barramundi, smoked mussel emulsion, kohlrabi. Super crispy barramundi skin and perfectly cooked tender, soft fish.  The seasonings? We love it. Light yet flavorful but I keep coming back from more.

I was debating whether I should get a main too since we ordered a lot but my mom urged me I should try their beef so I did and I did not regret it. Wagyu 250g Rump Cap (ms8) - watercress salad, sauce bordelaise ($46). Medium rare beef, simply beautiful on it's own. 

The part we are all waiting for; Pistachio Souffle and Poached Pear. The souffle is one of the best souffle I ever seen, fluffy, rise high and stay there for a long time. My mom loves the pistachio flavour as this is the first time for both of us tasting souffle in pistachio flavour. The poached pear also surprised us, sour, fresh with creamy cream anglaise almost pudding like. Yum! A nice way to end the meal indeed.

The service was friendly, professional and they even very accomodating to my baby and joke around whether they want me to let them baby sit my baby so I can eat in peace. I honestly love all of the dish, so does my mom. This is definitely my highlight of the week. I would definitely be back once they change their souffle flavour.
