Edition Coffee Roaster is located in Darlinghurst serving unique fusion between Scandinavian and Japanese aesthetics. Owned by Daniel Jackson and Corie Sutherland, they are inspired by Scandinavian restaurant such as Noma combined with their extensive travel all through Japan.

I was in town for a short work trip and some of my friends recommended Edition Coffee Roaster for a unique brunch experience so I take my friend, one of the wives of the famous dessert bar, Koi to try it with me. The venue has no sign in front of the cafe so it's a bit confusing, the cafe it self is petit, simple with all white, light wood decoration. One thing was clear, they take their coffee seriously, from cold drip, experimental batch brew or classic cappuccino they have it. 

Fisksoppa (Nordic Fish Soup) - fresh seasonal fish, broth, pastry, burnt eschallots ($22). This is a unique soup but the fish was a bit too overcooked but the broth was tasty yet light. Love it.



Yakuza Breakfast - matcha hotcakes,passionfruit, roselle flowers and native honey ganache ($19). The matcha hotcakes were much heavier than I thought it would be, it's very filling even though the texture was fluffy. The sauce has a balanced sweetness, texture, creaminess from the mascarpone and acidity from the passionfruit. 

The service was average but the food take a little bit long even though it was weekdays and there are barely people around. I do enjoyed the combination of Scandinavian and Japanese flavour since it's rare to find.
