Third Wave Cafe is one of my favourite place in Melbourne to eat some frickin delicious BBQ meat. Yes, they specialise in BBQ and they are really good at it. They are very famous and popular, busy even on the weekdays. Opened in 2010 begin with Inga, a passionate lady, Third Wave Cafe journey begin with their custom built smoker named Brutus.


We begin with their Pig Freak-a-Shake Milkshakes - bacon milkshake, candy bacon, oink ball. The milkshakes taste like butter, it's very rich and creamy but seriously I love the candy bacon so much, brushed with maple syrup, drizzled with organic brown sugar and chilli then slow cooked until it has a similar consistency to jerky. Then of course the oink ball, pork meat balls wrapped in streaky bacon, smoked and grilled.


Specials; The Bacon Cake - bacon weaves, mac & cheese, Monterey Jack cheese, burger patties, sweet potato, pulled brisket served with bacon floss, candy bacon, oink ball ($25). First, I'm pretty scared of it but wow it's delicious and not too greasy or rich. I love the bacon floss on top and the whole combination is just worked together nicely.



Pork Ribs - Tender, juicy, melt-in-your-mouth ribs. Done in the Southern tradition using dry spices only. Served with 2 different BBQ Sauces – Que You Spicy BBQ and Apple Bourbon. Perfectly cooked pork ribs with delicious home made sauce. I do have their sauce on my refrigerator at home.


Beef Brisket - An unusual cut for most of us but really common in the US. You will love the beefy flavours. The meat comes out soft and delicate. Smoked for 8-10 hours using Hickory wood. Served with Que You Spicy BBQ and Horseradish Sauces. with Smoked Mac & Cheese and Onion Rings. I love the super crispy onion rings, not too oily. The super tender soft brisket is another one of my fave to Third Wave Cafe.





Third Wave Caters for dine in, take away as well as delivery around their location. It's still my favourite American BBQ restaurant in Melbourne. I just wish they have a bigger restaurant for larger group of people or functions since their food is best to share and I would love more variety as well on my table.
