Imbue Food & Wine opened October last year at Maribyrnong. It's a petit yet warm comfortable restaurant with 48 seatings. Lead by Chef Phong Nguyens (ex Movida) serving variety, ever changing of Modern Australian food with a lil bit of Asian influences.

Whipped feta, honeycomb, dukkah ($11) & Chicken Liver Parfait ($12). The whipped feta is one of their signature dish and has been a favourite to many people. It was light with balanced cheesey flavour and I just love the crunchiness from dukkah and ended with sweetness from the honeycomb. As much as I love the cheese, I love the super creamy yet light with no gummy taste or smell at all chicken liver parfait. I could eat this for days with the crispy crostini.






Raw Tuna, ponzu, spring onion, chilli, rice crisps ($18) & Roasted Pork belly, green papaya salad, coriander, chilli, jus ($18). Another favourite of the night. The raw tuna was fresh and has it's firmness with homemade rice crisps. This is a must to order. Then the perfectly crispy pork belly came as our last entree. It sets up a nice feeling for mains.






Market fish, caponata, beurre noisette ($30) & House salad, mustard vinaigrette ($8). They change their fish according what's on the market that day. Mine was light white fish with light foam. The whole dish is just airy, light and delicate.



Vanilla Panna cotta, berry compote, freeze dried raspberries ($11) & Sticky Date Pudding, salted caramel, vanilla ice cream ($11). I was so full but dessert is a must. The pannacotta was light with perfect balance creaminess. I literally left my husband just a spoon of it cause I like it so much. He loves the sticky date, warm, fluffy and not too sweet.




The hospitality is amazing, from the beginning to end. Flawless, friendly yet professional. They are very accomodating to my baby more than any other restaurant I visited. The manager offers him pumpkin puree even carry him for a bit. He understands how hard it is to travel and dine out with a baby and he seems to know everybody that comes in to the restaurant. They clearly have lots of regulars, that's always a good sign. Me, my self would love to come back for their scallops, prawns and porterhouse.
