Burn City Smokers is all about South America BBQ. Steve Kimonides and Raphael Guthrie started Burn City Smokes years a go by taking a leap of faith and bought some expensive BBQ equipment from USA. Then they start venturing around in a pop up manner at Victoria Market, Mornington and now in Grand Hyatt Hotel, Melbourne CBD. Both of them has a clear passion for the ingredients, quality and the local produce. They team up with Grand Hyatt Melbourne Executive Chef Jason Camillo creating a range of menu with Hyatt's food philosophy; Food. Thoughtfully Sourced. Carefully Served.


I was invited to taste their BBQ feast on a weekdays lunch time. I'm so excited to see the combination of Burn City Smokers speciality cooking with wood and Jason modern style. A fan of meat, especially BBQ I went in with an empty stomach to their private dining room with other influencers on an intimate BBQ lunch. We get to meet and served by Steve him self.







A range of bites starting to arrived; Curried Egg - crispy chicken skin ($4ea), Pickled Mackerel - on rye, finger lime ($4ea) and Sweet Potato Crisps - French Onion Dip ($10). I'm seriously in love with their super thin and crispy sweet potato chips with rich French onion dip. I can't stop eating it and I want more. Curried egg with crispy chicken skin, what's not too like? 








Then we move on to Small Dishes; Pine-needle Smoked Portobello - green peppercorn, pine mushroom sauce ($15), Beef Tartare - bathed in brisket drippings ($16) and Cured Salmon - smoked salmon roe, cottage cheese ($16). Amazingly, the mushroom throughly shine. It was rich and delicious. Contrary,  the beef tartare and cured salmon was light and fresh. I truly enjoyed all of these dishes.








Entering the Large Dishes course; Smoked Brisket Burger - BBQ sauce, mustard, pickles ($17), Milawa Smoked Chicken - 1/2 chicken with mustard sauce ($32) and 8 hr Smoked Tasmanian Short Rib - Chimmichurri ($45) with Creamed Corn, Baked Beans, Mac n Cheese and Baby Cos Salad. These are their top dishes! Burn City Smokers is super famous for their burger and I do not have to talk about, how good it is cause everybody knows how good it is already. Chicken is something that most people found blend if not cook well but seriously this chicken is packed full of flavour, cooked perfectly, tender, juicy with super rich mustard. I would love to order this again with their fall of the bone short rib with perfect amount of pepper. Love it.











We could not leave without dessert! Waffle - honey, bee pollen ice cream, thyme syrup, crispy pancetta ($16), Coffee Rubbed Peanut Butter Semifreddo - choc sauce, honeycomb ($16) and Smoked Whole Apple - walnut, cornflake crumble, frozen ricotta ($16). Out of all, I love their smoked whole apple. It's rich but light and refreshing. It's just what I need after a heavy BBQ meal. The semifreddo was a bit too rich for me but good to share between 4 people.





I went home with a happy heart and full tummy. Gladly, told my blissful experience to my family that night and we plan to visit them soon straight away. I want to try their duck, steak, pork belly and lava cake. I clearly still have passion and curiosity for Burn City Smokers. It's the perfect BBQ, especially for winter. Burn City Smokers menu available lunch from Monday-Friday and dinner from Monday-Sunday until the 31st of August.
