The Butchers Bench is located in Novotel Glen Waverly lobby area. In the morning they served buffets breakfast mainly for the guest then lunch and dinner open to public serving special lunch menu and casual ala carte dining. Executive Chef Ross Chapman believes in maintaining the integrity of produce at all costs. ‘It’s all about taste, ensuring each dish delivers a punch of flavour, texture and colour to satisfy our customers,’ says Chapman. Executive Chef Ross Chapman, originally comes from UK, has worked at a number of Michelin Star restaurants under high profile chefs such as Gary Rhodes, Phil Vickery and Robert Clayton. He also has worked in Perth (1999) for the Duxton Hotel and Ascot Racecourse as Head Chef at the age of 25. Then he is up for his next adventure at Maldives, spent three years running a 5-star resort with multiple restaurants before returning to Australia as Executive Chef of Novotel Glen Waverley. 

I was invited by Maddy, Communications & Social Media Executive of Accor Hotels to come in to The Butchers Bench and taste the latest creations of Executive Chef Ross Chapman. It was a rainy and cold day, I decided to come early and then greeted by a lovely staff that offers me to sit in their lounge area with some warm drinks while waiting for the main area to open at 11.30am/12pm. The restaurant it self is spacey, airy and bright, full of natural light from the big window which I love.

Beef Carpaccio - shaved parmesan, rocket leaves drizzled with truffle oil ($16). I love this dish so much that I could eat another serving by my self. The beef was perfectly thinly cut with perfect seasonings and a nice refreshing touch from the rocket and a lil bit of saltines from the parmesan.

Crispy Calamari - szechuan ground spices, citrus aioli ($17). The texture of the calamari was perfect, very well cooked. It was soft but still have the bouncy calamari texture mixed with creamy aioli but we expected a lil bit of punch or strong flavour from the szechuan spices but the taste was pretty mild. Not that we mind it.

Caprese Salad - buffalo mozzarella, heirloom tomato, basil panagratato ($22). This is part of the brand new lunch menu and honestly a perfect summer salad. It was super fresh, light yet full of flavour and very well presented. It was so pretty that I felt a lil bit of hesitation to eat it.

Green Tea Smoked Duck Breast - roasted baby beets, hazelnut crumb with raspberry glaze ($40). It was so delicious, I can feel the smokiness on the super tender, well cooked duck. There was no gummy duck taste or smell which was highly appreciate by my mom and the raspberry glaze added a nice soury sweet flavour that we like.

Surf & Turf - New York steak with grilled garlic prawns & crispy soft shell crab ($44). Some might argue that surf and turf is out dated but seriously I still love it. It gives me all that I wanted in one plate, meat and seafood combinations. We were given a choice of sides and sauces and we picked mash potato and garlic butter sauce. The mash was creamy, smooth and beautifully presented but the sauce was too watery for my taste. The steak was very well cooked and seasoned, tender easily cut and bite. Prawns were fresh and succulent. The last but not least super crunchy soft shell crab. A well done dish indeed!

Coconut & Vanilla Pannacotta - kiwi jelly, mango coulis ($15). As usual, I couldn't get away from pannacotta. For me, the texture was in the middle of pannacotta and a mousse. It does not have the jiggly effect but super creamy and milky which I love.

Warm Chocolate Sabayon Tart - whiskey creme ($15). My mom loves any dessert with alcohol in it and she only drinks alcohol in a form of dessert. The tart was thin and crunchy with warm oozing chocolate inside and super strong whiskey creme in the side. Loves it!

There was an incident during our visit, my mom spill hot water to her own hand due to lack of knowledge of the tea pot but the staff was really accomodating. They bring her burn spray and keep asking her until the very end that she was fine. We went to the GP afterwards and she recover quickly after. No drama. Besides that, we love all of the dishes presented. All of them are well presented and taste delicious. I would recommended this restaurant for special occasions or even functions.
