Cornerstone & Co. is a Japanese and Italian fusion cafe, something we don't come across than often. Located a bit hidden in a residential area but very popular with the locals even on the weekdays. Recently they also started offering a monthly dinner degustation. Owned by Michelle Pavone's and Nick Gulino's with the menu created by Japanese Chef Shoichi Ueda who had experience cooking in Italy and at South Yarra's Da Noi. 

I had no plans of going out that day but suddenly when I wake up I was really hungry and asked my husband who had a day off, whether he wanted to eat out or eat in. He said let's eat out then Cornerstone pops up into my mind. The cafe has three seperate area, several seats outdoor in front of the cafe with some umbrella's, indoor space and outdoor courtyard at the back. Because it was a gloomy, windy day we opted for indoor seatings. We ordered coffee and chai latte, the chai was surprisingly really good but the coffee has a little bit burned flavour.

My husband ordered Karaage Chicken Burger - crispy fried chicken, house mayonnaise, cabbage, coleslaw, pickled vegetables, brioche bun & salted edamame ($15). When it first arrived, he was kinda wishing he ordered the okonomiyaki just because it looked so simple but when he tasted it he really like it. The bun was moist and slight sweet, the mayonnaise was really tasty but the star clearly was the super crispy chicken with upmost flavour inside. I honestly love it as well.

I ordered Black Sesame Salmon - grilled salmon, okra, kidney beans, herbed rice, crunchy quinoa, spiced grana padano tomato coulis ($21). The salmon was well cooked but a bit blend, a lil bit of salt would make it perfect but the combination of rice, avocado, tomato was really really nice. Light, fresh yet flavourful.

The reason Cornerstone attracts me was their Granola Pannacotta - house made granola, yoghurt pannacotta, apple soaked tapioca, berry, passionfruit and mint ($15). Everybody knows by now, I love pannacotta so much and my visit to 4 other previous cafe to hunt down pannacotta turns out to be a failure. Either they don't have the pannacotta for certain reasons or the pannacotta was not up to my standard. Gladly, this panna cotta was smooth, had the right texture and perfectly combined with passionfruit. I tasted a lil bit of bitterness now and then from the granola which I think comes from the walnut but besides that I like the dish.

The service was friendly, accomodating and the food comes in pretty quickly even though they are really busy. The table besides me keep complaining about their drinks, how the staff handle it was really professional and calm. It is certainly a wonderful brunch experience complete with fresh light yet flavourful food.
