Too Many Chiefs is a new cafe in Brighton opened by Jayben Newson and his sister. They pride them self in using the best produce since all of Too Many Chief staff's are very well trained and passionate in creating the best dish around.
I was invited by Jayben and decided to visit with my husband on a Saturday. The cafe was petit but modern, airy and bright. I love the natural light coming in to the cafe via the big glass window. They also have a small charming window for a quick takeaway coffee. They are located right besides the North Brighton Station from inside the cafe you can see the graffiti via the small take away coffee and replaced by a moving train when the train pass by. There are also plenty of parking spots around the cafe even though on weekends the streets are pretty busy.

Crispy Potato Roesti with short middle bacon, 2 poached eggs, orange, avocado, almond and rocket salad topped with hollandaise ($18.5). The potato roesti was really crispy but remain soft and moist inside, I added a chorizo to the dish which was delicious. The eggs was cooked perfectly but what I love the most was the salad, it was fresh, love the orange mixed in with the avocado and rockets.

Twice cooked French Toast with a chocolate and cherry sauce, crystallised pistachios, raspberries and a vanilla cream ($17). The french toast was a bit different than any other cafe's around, it was really dense and heavy even though they taste was nice. Love the taste of cream mixed in with chocolate, cherry sauce and crunchy pistachios.

Their coffee was decent and they also served prana chai and pressed juices. The service was friendly and attentive. Overall, it was a nice Saturday brunch.
