Pablo Honey merely open one and half months a go by four guys; Brad Jones, Matt Carpenter, Russell Mckenzie and Azza Mondo. It always been a dream of them to opened up their own places. When I arrived at Pablo Honey, I was amaze by the strategic locations. It is located in front of the lively area of St Kilda Beach. 4 minutes walk from Luna Park and 2 minutes walk from the beach. Perfect for a fun summer night with a group of friends. 

I was nicely greeted by Emily who I have talk previously in the email. The restaurant has several seats outdoor but most of them are located inside their spacey and artsy restaurant. I love the interior, they use hexagon shapes mimicking bee's nest as a decorations all around the restaurant. Somehow it makes the restaurant edgy and modern. They have a wall full of sugar skull art by Jess Carpenter of Killer Design, Matt's wife. I let you in on my little dark secret, I love skulls so much. The sugar skull are for sale ranging between 150-400. Since the opening they have sold over 40 skull and she is barely catching up with the demands cause some skulls takes hours to make some others takes weeks.

The awesome paintings are also on sale, they were painted by own of their very own waiters Isabella Iskaf by Bella Illustrates. Pablo honey has officially make their restaurant the new, modern, artsy and vibrant place to hang put.

They just changed the menu a couple days a go and added some Summer menu. We started with Grass Fed Beef Tartare - salted egg yolk, smoked chilli, lime caviar, coriander & cumin seed lavosh ($17)

Ceviche of Octopus - pickled onions, squid ink, mushroom & almond ($16). They recommended this dish and turns out great. The flavour is unique, flavourful but not over powering.

Smoked Chicken Winglets - pico de gallo and habanero pebre sauce ($15). Wings is one of the most popular dish at Pablo Honey and  we all enjoyed it.

Shaved Calamari Salad - lemon balm, puffed quinoa, coriander & chicharon ($16.5). It was light, unique and fresh but somehow I wish it was a deep fried calamari. All of the starters served in a generous portions and worth the price.

Slow Roasted Pork Hock - tequila, lime, roasted chilli glaze, corn & roast pepper salsa & soft tortilla ($50). We saw the table besides us feasting on this when we arrived, we know we have to order them. It was crispy, juicy and still tender inside. The sauce was sour and refreshing. It's a nice Mexican way to fest on pork hock with a soft shell taco and refreshing salsa.

Smoked Fillet of Snapper (500g) - abalone butter & grapefruit & seaweed salad ($45). Another generous size  dish. The fish was well cooked with rich buttery flavour but it has a light after taste, we agreed that we love them. The seaweed salad was fresh but it has a bit of fishy flavour from the seaweed.

Dulce de Leche Mousse - berries & bitter chocolate ($13). I love this dish so much and as predicted Jess made the mould. It's the perfect combinations between the custard, chocolate and berries.

They have a large varieties of Cocktails to enjoy, Mocktails are available upon request. I requested something fruity but no soda and both times it comes out great. 

They have a special Chase Azul Anejo Ultra Tequila ($200/shot) and all the names of the people that has drink it is written on the wall. Your name could be on the wall too if you order them!

We have a chat Bella, Emily and Matt every now and then while we are having dinners. They are all a great friendly and helpful host but they also seem enjoying their time working at Pablo Honey. Sadly, Jess was not working that night, I would love to talk more regarding her skull art. We ended up staying for more than 3 hours because we are having so much fun. On our way they given us this cute little chilli salt to be used at home, I've been told they are great on corns. I'll definitely try them.
