Shandong Mama follows the traditions of dumpling making but also create new innovative recipes. For Shandong Mama dumplings are an art form, not just passion but an obsession. Their in house dumplings are different than any other dumplings around, it takes dumpling to the next level with different kind of skin wrap and variety of the fillings. They have three different skin dumplings, differentiate in the grades of thickness to match the fillings and the method of cooking. Fish dumplings taste best in a thin skin which allow fast cooking, in contrary with the meat dumplings it need thicker skin to withstand longer cooking.

The original store is at Bourke St but finally it opens a mini version of the store on the other side of the city. They sell a mini versions of the menu from the original Bourke St branch.

The most popular dumplings is called Melbourne - marinara, chicken minced, lemon rind, olive oil, parsley and garlic ($10.8), it taste really good and certainly it was a gourmet dumplings. Another popular and tasty menu is the prawn, black fungus & chives - chunks of fresh prawns with chopped chives, black fungus, and pork minced for texture and flavour ($10.8). 

The special hot and sour soup also not bad at all. I don't really like their seaweed salad, it was too sour for me. 

The shredded pork bun was sweet and tasty, the bun was fluffy and soft, the meat was so soft and full of flavours. Love it.

One of the staff was a bit rude and agitated the whole time I was there but the other one seems nice and helpful. The prices is slightly more expensive than the normal dumpling places, approximately $40 for two people.
