Rudimentary has open for several months now and it's currently one of the trending brunch spot in Footscray. 

It's an industrial theme brunch place and my friend was an Industrial designer and she said they actually build the place with combining three container. 

I love the interior and the vibe of the place, coloured leather rotating chairs, timber tables, the trending exposed light bulbs, large open window to allow the natural light in and open kitchen where you can see the chef's cooking your food. They also have garden all around where you can sit down and enjoy the sun. On the sides of the cafe there is a little vegetables garden which I heard sometimes they harvest their own vegetables and leaves.

The menu provides all day breakfast options and lunch dishes from 11am. I decided to order one of their popular dish, the pork belly - braised with crispy pig's ear, chilli & tamarind, fried eggs and toast ($19) it was delicious. The sauce had a punching flavours, the pork belly was well cooked, crispy skin and falling of the bone meat.

Breakfast bun - fried egg, bacon, cotechino, sweet onion and hot sauces ($11.5) + field mushrooms ($4). The mushrooms was beautifully made and tasty, the breakfast bun was quiet good but over shadow by the pork belly for sure.

Housemade buttermilk waffle - maple, pancetta, quince & quark ($15.5) + fried egg ($1.5). It has an interesting sweet but light textures, the waffles was soft but I wish it's a bit crunchy on the outside. The pancetta, quince and quark work perfectly together with the waffles.

They use small batch coffee and it was good. It's rare to see fresh pear market juice ($4.5) and it was refreshing and light. They are busy on the weekends, it's better to come early or wait for a little while. Their prices are reasonable, approximately $30 dollar for two people with two meals and beverages. Overall, definitely recommended!
